Crust:
1 c. ground almonds (or mix half with oats for a lighter crust)
1/4 c. honey or coconut nectar
1/4 c. cacao/carob powder
dash salt
optional – 1 T. coconut oil for a richer crust
Grind almonds in a food processor until they make a coarse meal. Add sweetener, powder and salt, oil if desired. Press into a pie plate or tiny tart bowls.
Fill with Filling:
1 1/2 c. macadamia nuts (or cashews)
juice of 2 oranges
3 T. psyllium seed
1 T. orange zest
1 T. coconut oil
1/4 c. raw honey
dash of Himalayan (or other) salt
dash vanilla powder (or 1 tsp. vanilla extract)
water/date water/almond milk/coconut milk as needed
Blend nuts and other ingredients until mixture is very creamy, adding water slowly, as needed. Let set in fridge to chill and firm.Top with orange slices or cacao nibs, if desired.
Orange Chocolate Cheesecake
This is a very thin crust, but so delicious. If you like a thicker crust, double the recipe.
Crust:
* 1 C raw, soaked almonds or almond meal
* 4 Dates. soaked Save the date water and add it 1 Tab. at a time.
Combine all ingredients in the food processor. Process until ground fine. Mixture should hold together when pressed. If it doesn’t, add (date) water, 1 T at a time until texture is achieved. Set aside 1/4 C. Press remaining into bottom of 6″ spring form pan or glass pie plate. Place in refrigerator.
Filling:
* 3 Oranges
* 2/3 C raw Agave, honey, or other sweetener – sweeten to taste
* 1 C Cashews (soaked at least 3 hours)
* 1 c. soaked almonds
* 1/2 c. soaked pine nuts
* 3/4 C Coconut oil
* 1/2 t. Sweet Orange Essential Oil (optional as it is not raw but still very healthy)
Grate the zest off of all the oranges. You should have at least 3 T. Be careful to only get the orange part as the pith (the white) is bitter. Squeeze the juice out of all the oranges. You should have about 2/3 C. Place nuts, agave, coconut oil, zest, essential oil, and agave and orange juice in the food processor and process until very smooth. Pour over crust and refrigerate until firm.
Add Raspberry Sauce – Blend 1 T. chia seeds, soaked 10 minutes, with 1 c. raspberries and 1 T. raw honey or agave, to taste.

Crust:

1 c. coconut
(1/4 c. raw oats, ground – optional)
1/4 c. soaked, pitted dates
1 tsp. coconut oil
1 tsp. cinnamon
dash sea salt
Food process the nuts first, then mix into a moist crust with the other ingredients
Filling:
1 ca. macadamia or cashew nuts, soaked one hour
2/3 c. coconut water (1/3 c. coconut + 1/3 c. water)
juice of 1 1/2 lemons
3 T coconut oil
3 T honey or date water
Blend.
Topping – Berries of choice, sliced, or
mixed with 1 T. chia, soaked 10 minutes
1 T raw agave
