Sprout 2 c. black beans by soaking them in water for 12 hours, then rinsing every 12 hours for 5 days, until the length of the sprout is as desired.
Black beans aren’t known for their sprouting. If you get 50% of them sprouted, consider yourself lucky.
Grind them in a grinder or food processor.
Add:
1 tsp. onion
1-2 cloves garlic
1/2 tsp. red pepper
1 T. balsamic, apple-cider vinegar, or coconut vinegar
1 T. coconut aminos
optional – 1 T. vegan worcestershire sauce
salt to taste
Cucumber Dip
1 1/2 c. raw almond sour cream (cashew or macadamia nuts), or nut/seed yogurt
(Soak 1 1/2 c. nuts in water for 12 hours, sprout 1-2 days. Blend with 2 c. water, strain through a cheesecloth.The liquid will be your sour cream. Let that sit on the counter with 1 T. lemon juice, barley
water or rejuvelac, with a paper towel on top, for 8 hours.) (Keep the almond meal/pulp in the bag and hang
the bag for 8 hours to make almond ricotta.)
To the sour cream, mix in by hand:
1 cucumber, peeled, diced or processed until fine. Strain the liquid out so it won’t make the dip runny.
2 T. chopped onion
1 1/2 T. ground dill
herbs of choice – I used thyme, cilantro, basil, mint and garlic greens
Sea salt to taste
Serve with raw crackers, vegetables or rolled up in spinach/lettuce leaves.

3-4 spinach leaves, finely diced
16 oz. diced artichoke hearts
1 T. Dijon mustard
1/2 tsp. black pepper or Trader Joe’s 21 Seasoning Salute
1/2 tsp. garlic
herbs of choice – I used thyme, cilantro, basil, mint and garlic greens
Sea salt to taste
Serve with raw crackers, vegetables or rolled up in spinach/lettuce leaves.
In food processor, process:
2 c. cashews for 7 minutes, or until creamy.
Add:
1 yellow bell pepper, sliced
juice of 1 lemon
1 tsp. sea salt, to taste
1/4 tsp. chipotle powder, to taste
Blend again until creamy. Makes a great spread for celery, like cream cheese, or wraps, mock tacos, vege dips and crackers.
In food processor, blend until chunky or creamy:
1 c. walnuts
2 T. Coconut Amino Acids, Bragg’s Amino Acids or Nama Shoyu
1/2 c. peppers of choice
1/2 tsp. chili powder + turmeric
Serve as a pate for veges, on raw crackers, on celery,raw chips or mock tacos.
Delicious, creamy dip made from sunflower seeds and spices!
1 c. soaked sunflower seeds
3/4 c. water
2 Tbsp. Nutritional yeast
3/4 tsp. salt
“dash” black pepper
1/8th -1/2 tsp. chipotle powder
1/8th clove garlic
1/2 tsp. onion powder
1 Tbsp. paprika
D’s addition – add Bragg’s, about 1/4 c. and dash of Rejuvelac
Blend seeds, water and salt until creamy. Add remaining ingredients and blend until well combined.

Ingredients: 1/2 c. cashews, soaked at least 45 minutes in a little water or rejuvelac
a handful of shredded coconut
1 Tablespoon apple cider vinegar
1 tsp. honey or 2 dates, soaked
1/2 c. juice from an orange or lemon
Blend the cashews and water first until creamy, then add the other ingredients. For a more sour taste, to make sour cream, add 2 T. vinegar and let it sit on the counter for 8 hours. Absolutely delicious. Use as a base on your lettuce or spinach roll-ups, topped with guacomole, avocado or salsa, cheese dips or on raw crackers.

1 cup macadamia nuts, soaked 1 hour
1 chipotle chile, soaked 1-2 hours or 1/2 tsp. chipotle powder
1 cup soaking water from chile
Sea salt to taste
Blend all ingredients in blender until completely smooth. Yields 3 cups. Add more
water for a creamier dip. Great with warm broccoli or veges/raw crackers of any kind, as a dressing for salad or rolled up in a lettuce wrap!
