Slice 2 zucchini with a spiralizer, cia bo, or peeler. Soak the zucchini strip for 30 minutes in salted water and then drain them to make them noodle-like.

Pesto:
3/4 c. (Thai) coconut water.
2 cloves garlic
juice of 1/2 lemon
1/2 tsp. sea salt
1 c. pine nuts, soaked at least an hour
1/2 tsp. nutmeg

Blend until creamy and pour over zucchini pasta. This picture is the zucchini pasta with avocado, marinara and the alfredo sauce. Wow!

3/4 cup (Thai) coconut water.
(If you don’t have coconut water, but have an open coconut, shred a cup of coconut and blend it in the blender with a cup of water. Strain.)
2 cloves garlic
juice of 1/2 lemon
1/2 tsp. sea salt
1 c. pine nuts, soaked at least an hour
1 c. basil, chopped
2 T. olive oil
Blend all except the zucchini. Pour over pasta.

Soak 1/3 c. sunflower seeds overnight. Drain and let dry for 8-10 hours.

Put the sunflower seeds in the food processor with:

1 small stalk celery

1 T. olive oil

2 cloves garlic

1 T. apple cider vinegar

1 T Bragg’s amino acids

pinch pepper

pinch sea salt

about 1/3 c. water to make the sauce creamy.

Process all and add water as necessary to create a smooth, creamy texture. Pour over any kind of squash pasta – zucchini, banana squash, etc… shaved with a mandoline, knife, spiralizer or omega 3 juicer to make into noodles. Absolutely delicious.

If you have leftover sauce, combine with a little more vinegar, 1 T. honey or raw agave and water to create a wonderful dressing.  It’s grey – but incredible.

simply with only 4 ingredients!

1 yellow bell pepper – Put in blender first and blend.

1  cup macadamia nuts- Blend again.

salt and cayenne to taste. Blend some more. Don’t add water. Just keep blending, and you have the cheese.

Refrigerate, she says, for the cheese. Dehydrate for the crackers, for at least 24 hours, more for crispy crackers,

less for chewy. Oh, my gosh!
