    A Delectable Dessert Recipe
    We’ve gotten many requests for recipes lately, and today we’d like to share a delicious and simple dessert courtesy of cafe chef Joshua Vermont.
    These Raw Coconut Macaroons are one of his favorite recipes because they are easy to make, always popular, and low glycemic.
    8 c. coconut
    2 c. xylitol, powdered
    2 pinches Himalayan salt
    1 tsp. Liquid Stevia
    2 T. chia seed
    1 1/2 c. Tree of Life Simple Syrup (see how to make below)
    3/4 c. liquid coconut oil
    1 c. boiling water
    options  leftover nut milk meal, 3 T. Irish Moss gel to make it creamy
    To make the Simple Syrup, ground 1 1/2 c. xylitol, slowly turning the blender up until it’s powdered. Measure out 2 C.
    In a bowl, pour the 1 tsp. liquid Stevia into the boiling water. Add the xylitol. Stir until dissolved. Cool.
    Add salt to the coconut, add the chia, then 1 /2 c.  of the Simple Syrup, then the coconut oil. Form into balls and chill.
    OPtions :1. Chocolate – I added a dash of cinnamon and 1 1/2 c. cacao powder
    2. Almond Vanilla – I added almond flour, a dash of maca and nutmeg. The additional spices gave it a real  caramel taste.
    3. Honey – add 3/4 c. honey instead of the Simple Syrup, not low-glycemic but amazingly good.
    4. Vanilla – add a pinch of vanilla

    4. Dehydrate for a drier, sweeter tast.

    raw chocolate mousse…

    Finally got around to using that Irish Moss in my cupboard and made some delicious Raw Chocolate Mousse from the Cafe Gratitude Cookbook, ‘I Am Grateful.’. It was delectable and delightful. My temporary roommates are all now cacao-addicted. Here’s the recipe:

    1 oz. Irish Moss
    1/2 cup water
    4 cups almond milk (better if you make your own, though you can get some store bought)
    1/2 cup date paste (you can make your own by blending pitted dates)
    3/4 cup agave
    pinch of salt
    splash of vanilla
    3/4 cup raw cacao powder
    3 TB lecithin
    1 cup coconut butter

    Directions:

    Blend soaked Irish moss and water extremely well.(One of the reasons why a Vita-mix or other high speed blender is ideal.)
    Add all the other ingredients, except the lecithin and coconut butter.
    Keep blending until the mixture is smooth.
    Add lecithin and butter and blend another 30-40 seconds.
    Pour the mousse into cups and decorate with flower or cacao nibs.

    Raw Cacao Smoothie with Irish Moss

    Irish Moss Drinks: Don’t want greens but still want minerals?

    Introducing nutrient packed but never fishy smoothies featuring Irish moss with easy instructions for beginners!

    ½ oz Irish Moss soaked and blended until creamy in ½-1 cup water
    4 cups almond milk (or any type of nondairy milk)

    1 frozen banana

    4-6 medjool dates (pitted) or 2-3 tablespoons agave to sweeten

    2-4 tablespoons raw cacao powder (how much do you like chocolate?)
    1 tablespoon coconut butter/oil

    A pinch of Royal Himalayan Pink Crystal salt
    ½ vanilla bean scraped, or 1 tablespoon vanilla extract

    Dash of cinnamon and nutmeg

    Add all ingredients to Vitamix or blender and mix until creamy. You may want to start off with less Irish moss and adjust to your thickness preference.

    Here’s an easy smoothie recipe using Irish moss. You can also add to mousse, puddings and raw pies as a substitute for gelatin.

    If you happen to live in the Nova Scotia area and are harvesting yourself, you want to let the moss sun dry so that the carageenan activates. For the rest of us buying already dry moss (try Maine Coast), you’ll need to mix with water to thicken. Rinse it well and let soak for 3-4 hours in lukewarm water. Rinse again and look for sand or debris before using. When the moss is creamy white and twice the size it was dry, it’s ready.

    Emerging from the ocean, Irish sea moss is a unique sea vegetable in that it is the only plant source of the thyroid hormones DI-Iodothyronine (DIT), Tri-iodothyronine (T3) and Thyroxin (T4), vital for treating thyroid conditions. It also contains a number of vitamins, (A,D, E, F, K), iodine, calcium, sodium, sulphur and phosphorous. Irish moss can help reduce issues in the bladder, intestines, glands, joints, skin and stomach. And, Irish moss is also an excellent gelling agent. You may have heard of carageenan, an extract of sea moss used as a thickener. But use the whole plant, say, in your smoothie, and not only do you get the thickening effect, but the whole gamut of nutritional benefits.
