Sweet and Sour Sauce

Serve this beautiful and traditional sauce over meatless meatballs or use in a salad/Thai Salad Dressing. Use as a dipping sauce for veggies or a bed of cauliflower/sprouted rice.A quick and easy recipe that can be poured over a dish or used as a dipping sauce. It is great served with any other Asian-inspired delicacies. The pineapple tidbits may be omitted.
Ingredients:
2 cup pineapple juice (with tidbits of pineapple)
4 tablespoons vinegar (coconut vinegar/rice)
3 1/2 T.coconut crystals/raw sugar
1 T. psyllium seed
Mix by hand or in a personal blender, adding the tidbits of pineapple by hand. Chill until thickened. Serve over meatless meatballs, use in a salad/Thai Salad Dressing. Use as a dipping sauce for veggies or a bed of cauliflower/sprouted rice.
Raw Sweet Potato Casserole

Creamy, slightly sweet casserole topped with pecans
Ingredients:
1 cup pecans soaked overnight, then drained and dehydrated with 1/4 c. honey and 1 tsp. salt (optional)
3 cups peeled and chopped sweet potatoes
1/2 cup water, barley water or almond milk
1/2 cup dates, soaked for about 20 minutes
1 teaspoon cinnamon
dash vanilla power
Directions:
1. Line a casserole dish with your choice of 1 banana, 1/2 an apple or pear, 1 c. pineapple or mango, 2-3 dates chopped
1 Put potatoes, water/milk, dates, cinnamon and vanilla in processor and puree till smooth.
2 Pour over fruit into a casserole dish.
3. Sprinkle pecans over the potato mixture.
Eat now or warm in the dehydrator at 105 degrees for 2 hours until warm.
Yams are a nutritional power house. High in vitamin A and vitamin c, they are also loaded with fiber. They are excellent immunity builders and also help balance blood sugars. Adding these wonderful tubers to your diet provide a great healthy way to snack.
1 large yam
1 T. olive oil
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. garam masala
Peel and slice a large yam. Cut into fry shapes, but twice as thick as regular skinny fries. Put in a bag with the seasonings and oil, and shake wildly. Dehydrate for 4-5 hours at 104 degrees.
1 cup sprouted seeds: butternut squash, pumpkin, sunflower, or a mix of all three (to sprout, soak one day, drain off the water, then sprout and dry one day.)
1 T. raw honey or agave
1 T. coconut oil
1/2 T. salt
Mix all in a bag and pour over a dehydrator tray. Dehydrate for 104 degrees for 24 hours. A delicious recipe!

We were out with friends recently and they were serving Horchata – a Mexican rice drink…
Unfortunately, their recipe had cream, so we didn’t have any.
Annmarie wanted to give horchata a try using a raw food recipe… and she nailed it.
Use this recipe the next time you make your raw walnut meat tacos to WOW your friends!

Here’s the raw food recipe:
Horchata
4 Cups water
1/2 Cup uncooked long-grain brown rice (soaked over night) – (D’s note -not raw, unless it’s Lundberg Wehani Wild Rice or Sweet Arborio Rice – all rice should be soaked for 5 days, until a little a little white tip appears, keeping the rice moist or wet the entire 5 days, rinsing at least twice a day.)
1 Cup raw cashew nuts (soaked 20 min.)
2 Ceylon cinnamon sticks
1 tbsp cinnamon powder
1 tsp vanilla powder
1/2 Cup raisins
Making Cashew Milk:
Rinse the cashew really well and blend with 2 1/2 cups water. Strain the pulp with a nut milk bag and set a side.
Making Rice Milk:
Rinse the rice really well and blend with 1 1/2 cup water and cinnamon sticks. Strain the pulp with a nut milk bad and set a side.
Making the Horchata:
Blend the Cashew Milk, Rice Milk, cinnamon powder, vanilla powder, and raisins.
Serve in a glass with cinnamon sprinkled on top! You can also serve over ice
Ingredients

1/4 c. tablespoons maple syrup or raw honey
2 teaspoons olive oil
1 T sweet paprika
1 teaspoon sea salt
2 Pinches cayenne
Pour pecans in a bag and shake with the rest of the ingredients. Dehydrate at 104 degrees for 24 hours or until desired crispiness. Better make a double batch!

1 c. pecans, sprouted
Put in a bag and sprinkle with cinnamon,
nutmeg, 6 chopped dates, a splash of vanilla, a capful of vanilla, a touch of salt
and a splash of water.
Dehydrate less than 105 degrees for 1-5 days, if you can keep from eating them!
