Talk about fresh taste—it just doesn’t get greener than this! A super fast, delicious, nutritious snack to enjoy in a romaine or collard leaf boat, and also wrapped inside your favorite tortilla. This roll-up is full of flavor with a fresh herb and pumpkin seed pâté and marinated veggies. The garden herbs are warming and stimulating to increase the flow of oxygen-rich blood to your head.
Ingredients
For the wraps:
6 large collard leaves
For the Pumpkin Seed Pâté:
1-2 cloves of garlic
Juice of 1 lemon
1 cup soaked and sprouted pumpkin seeds
¼ cup flax oil
¾ teaspoon salt
¼ cup parsley
¼ cup basil
¼ cup dill
1/8 tsp. turmeric
For the Marinated Veggies:
2 stalks celery
1 cup shredded carrots
¼ cup onion, very thinly sliced red or green
2 tablespoons flax oil
2 teaspoons lemon juice
1 tsp. 21 Seasoning Salute
1/2 tsp. Rosemary
1/2 tsp. Bragg’s Seaweed Salt
¼ teaspoon salt
black pepper to taste
Instructions:
For the Pumpkin Seed Pâté:
1) Place the garlic and pumpkin seeds in your food processor fit with the s-blade. Process to chop.
2) With the blade running, add the lemon juice until the mixture is creamy.
3)Add the herbs and seasonings and pulse to finely chop the herbs. Scrape into a bowl.
For the Marinated Veggies:
1) Toss all ingredients in a large bowl and mix well to combine all of the flavors.
To assemble:
1) Lay a collard green on your cutting board with the darker side on the board. Chop off the stem and trim off any very thick portions of the remaining center stem.
2) Place 6 tablespoons of the pâté on the collard leaf and spread out a bit, but leave plenty of room for wrapping up the leaf.
3) Top with ½ cup of the marinated veggies.
4) Roll up just like a burrito, folding up the top and bottom first and then rolling in the sides. Enjoy!

For the wraps, use large swiss chard, (I kept saying collards – sorry!) or
Coconut Wraps – makes 3 large
Ingredients:
1 3/4 cups young coconut meat
pinch Himalayan Sea Salt
coconut water – Add SLOWLY – adding just enough water to reach a thick cream consistency
Blend until completely creamy smooth. Pour the mixture onto a Dehydrator tray lined with a Teflex sheet. Spread as evenly as possible and about 1/4 inch thickness. Dehydrate until the wrap is dry but still pliable.
Scrambled “Eggs”
Soak and sprout 1 c. almonds and 1/2 c. sunflower seeds.
In a food processor, blend until chunky
the seeds and nuts
1 tsp. turmeric
1/2 tsp. salt
1/4 c. water – add slowly while blendling
Put scrambled “eggs” on your wrap. Sprinkle with your choice of raw vegetables:
Spread with guacomole, if desired.
Sprinkle with diced:
cilantro
garlic
onions
mushrooms,
tomatoes
celery
peppers
salsa

Spiced Lentil Layer
* 2 1/2 cups sprouted lentils
* 1 tsp. mesquite
* 1 tbs. cumin powder
* 1/4 c. chilis
* 2 tbs. olive oil
* 1/2 tsp. black pepper
* sea salt to taste
Cashew Cheese Layer
* 1 cup soaked Cashews
* 1/2 yellow bell pepper (chopped)
* Juice of 1 lemon
* sea salt to taste
Blend. Start with the peppers and blend them first, with the lemon and salt. Then add the cashews.
Layer the cheese onto a lettuce leaf, then the lentil layer, then salsa, cashew sour cream or “cheese” and guacomole.

The Cheeze:
1 1/2 tsp. garlic – Process first
1/2 tsp. sea salt
1 c. cashews
2 T. lemon juice (about 1 lemon)
1/4 c. packed cilantro
~1/4 c. water, as needed
Process these, one at a time, after the garlic.
The Taco Meat:
1 c. almonds
1 T. olive oil
1 1/2 tsp. ground cumin
1 1/2 tsp. ground coriander
1/8 tsp. sea salt
Wrap in 12 romaine leaves, or cabbage leaves,Top with avocado, salsa, and the cheeze. Spread the cheeze on the leaf first, then the “meat,” then the avocado and salsa.

Wraps:
6-8 Collard Leaves
Filling:
ź red or green cabbage, sliced very thin
3 carrots, shredded or julienned
˝ bunch cilantro, stems removed
˝ bunch mint, leaves sliced into thin strips
2 cups mung bean sprouts
3 cups combination of sunflower, buckwheat, and green pea sprouts
1 red bell pepper, julienned
6 scallions, thinly sliced
Thai Dressing:
ž cup raw tahini
ź cup grated ginger
6 Tbs. lemon juice
ź cup agave nectar
6 Tbs. tamari
2 cloves garlic
1 cup shredded coconut
1 jalepeno pepper with seeds, chopped
2 cups water
Remove the stems from the collards, or cut the excess bulge of stem from the back of each collard leaf, without cutting into the leaf.
Then use one of these methods to soften them. (1) Lay them flat in the freezer and freeze them overnight, then run them under warm water to defrost. (2) Blanche them like Annemarie Gianni does in this video:
